  • Yellowstone 2015 Limited Edition Kentucky Straight Bourbon Whiskey has been hand-selected by Steve Beam, and is a marriage of 12-year-old high-rye bourbon and 7-year-old wheated/high-rye bourbons. After the 12-year-old bourbon has been extracted from the barrels, the barrels are used once again to finish the 7-year-old bourbons. As a result, Yellowstone Bourbon has an aroma of figs, chocolate and caramel corn, and leads to a bold palate filled with rhubarb vanilla, oak and freshly-baked pie crust. The finish is rich, with hints of raspberries and maple, and incredibly smooth. “It’s been a dream for my brother Paul and I to return the Yellowstone brand back to our family,” says Steve Beam. “With this bourbon, both sides of our family – the Beams and the Dants – and their distilling heritage, come together. It was one of the main reasons we partnered with Luxco, to bring Yellowstone back home and begin distilling and bottling it right here at Limestone Branch.” Pick up a bourbon rich in both history and taste today! About Yellowstone Yellowstone National Park was established in 1876 and just a few short years later, the Yellowstone Kentucky Straight Bourbon Whiskey brand would emerge with an equally-rich story. J.B. Dant, legendary distiller and the son of J.W. Dant, first began distilling in the late 1800s, using a "log still" instead of the more popular — yet more expensive — copper pot stills. A log still is made by hollowing out a tree trunk and lining the interior with copper pipes, a cheaper yet still effective way of distilling. As Dant’s Yellowstone brand gained popularity in Kentucky, he was able to purchase other nearby distilleries and formalize his process. In the early 1900s, it was through this expansion that Dant began working more closely with M.C. Beam of the illustrious Beam family. Together, Dant and Beam operated their network of facilities as the Yellowstone Distillery and continued to produce Yellowstone Kentucky Straight Bourbon Whiskey for "medicinal purposes" throughout Prohibition. Although the Yellowstone brand changed hands several times throughout the 20th century (first to Diageo and recently to Luxco) and eventually fell out of favor, Luxco, along with the Beam family’s new Limestone Branch Distillery, has recently revitalized the brand, unearthing an old Beam family recipe and partnering with Paul and Steve Beam to create a spectacular bourbon that pays homage to the original. About Bourbon There are not many things more American than bourbon, and although most of it is produced in Kentucky, it can be produced all over the USA.   • Rosebank 31 Year Old - Release Two (2). This alluringly light and vibrant 31 Year Old leads with citrus bursts, soft vanilla and candied almonds. Camomile, berry and baked banana grace the palate, with a signature smooth finish of sweet peach, oak and herbal notes. The second in the global series of legacy Rosebank releases epitomises the qualities that earned Rosebank reverence as 'The King of the Lowlands’. This rare bottling has been drawn from casks that were salvaged before the distillery’s untimely closure in the early 1990s. The 31 Year Old is comprised of scarce stocks from just before Falkirk site was mothballed in ‘93.  Despite spending over three decades in casks, the Lowland single malt retains a bright and zesty nose, with hints of lime and lemongrass. This light, vibrant profile continues onto the palate, where mint and chamomile are met with more robust notes of leather and banana bread. The dram finishes with long herbal notes, sweet peaches, and a hint of oak. Rosebank distillery was sadly closed in 1993 which was terrible news to Rosebank fans worldwide. Though good news followed in 2017 when it was acquired by Ian Macleod distillers, the distillery is expected to start producing again in 2023. This release, which is the final remnants of liquid from before the closure has resulted in a stunningly refined and rare 31 year old single malt. Rosebank 31 Year Old - Release Two $1,675.00
